Easy Healthy Broccoli Pasta

Description

A quick and nutritious pasta dish combining whole wheat pasta and fresh broccoli, flavored with garlic and optional Parmesan cheese.


Ingredients

  • 8 oz whole wheat pasta
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Bring a pot of water to a boil and add a pinch of salt. Cook the whole wheat pasta according to package instructions until al dente, about 8 to 10 minutes.
  2. When there are 3 minutes left, add broccoli florets to the boiling water.
  3. Drain the pasta and broccoli together in a colander.
  4. In a skillet, heat olive oil over medium heat, add garlic and red pepper flakes, and sauté for 1 minute until fragrant.
  5. Add the drained pasta and broccoli to the skillet and toss to coat in the olive oil and garlic.
  6. Season with salt and pepper and toss again to combine.
  7. Serve warm in bowls, topped with grated Parmesan if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stove or microwave, adding a splash of water or olive oil if necessary.
