Ingredients

  • 2 cups all-purpose flour
  • ½ cup granulated white sugar
  • 1 cup salted butter (or unsalted plus ½ teaspoon coarse salt)
  • 4 large eggs
  • 1 ½ cups granulated white sugar
  • ¼ cup lemon juice (freshly squeezed)
  • 1 ½ tablespoons lemon zest (zest of 2 lemons)
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat your oven to 350°F. Line a 9×13-inch glass baking pan with parchment paper.
  2. Add the softened butter and sugar to a large mixing bowl and mix until combined.
  3. Blend in the 2 cups of flour to create a thick dough.
  4. Press the dough into the prepared pan, making an even layer. Bake for 15-20 minutes until the edges are lightly browned.
  5. Whisk the eggs in a separate bowl until smooth, then add the 1 ½ cups of sugar, lemon juice, and lemon zest.
  6. Mix until everything is combined, then sift in the 3 tablespoons of flour.
  7. Remove the crust from the oven and poke holes across it with a fork.
  8. Pour the lemon filling into the warm crust and bake for another 20-25 minutes until the filling is set.
  9. Cool at room temperature for 2 hours, then chill in the fridge for 2 more hours before cutting into squares.
  10. Dust the top with powdered sugar and serve.

Notes

Serve chilled, dusted with powdered sugar. Store leftovers in the refrigerator for up to 1 week.
