- 3 cups cooked chicken, shredded or diced
- 1 cup broccoli florets (fresh or frozen)
- 1 cup cauliflower rice
- 1 cup shredded cheese (cheddar or your favorite type)
- 1 cup heavy cream or sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
- Optional: Green onions or parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- If using fresh broccoli, rinse and cut into small florets; if using frozen, thaw and drain.
- Make cauliflower rice by pulsing raw florets in a food processor until rice-sized, then cook in a pan with olive oil or butter for 5 minutes.
- In a mixing bowl, combine chicken, broccoli, cauliflower rice, and cheese, mixing well.
- Add heavy cream or sour cream, garlic powder, onion powder, paprika, salt, and pepper; stir until creamy.
- Pour mixture into a greased 9×13-inch baking dish and spread evenly.
- Optional: Top with additional cheese.
- Bake for 30-35 minutes until golden and bubbly.
- Allow to cool for a few minutes before serving.
Notes
Use leftover rotisserie chicken for quick preparation. Feel free to customize the cheese and add more low-carb vegetables.
