Description

A comforting and nutritious casserole made with chicken, broccoli, and cauliflower rice, all baked together with creamy cheese.


Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 1 cup broccoli florets (fresh or frozen)
  • 1 cup cauliflower rice
  • 1 cup shredded cheese (cheddar or your favorite type)
  • 1 cup heavy cream or sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter
  • Optional: Green onions or parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using fresh broccoli, rinse and cut into small florets; if using frozen, thaw and drain.
  3. Make cauliflower rice by pulsing raw florets in a food processor until rice-sized, then cook in a pan with olive oil or butter for 5 minutes.
  4. In a mixing bowl, combine chicken, broccoli, cauliflower rice, and cheese, mixing well.
  5. Add heavy cream or sour cream, garlic powder, onion powder, paprika, salt, and pepper; stir until creamy.
  6. Pour mixture into a greased 9×13-inch baking dish and spread evenly.
  7. Optional: Top with additional cheese.
  8. Bake for 30-35 minutes until golden and bubbly.
  9. Allow to cool for a few minutes before serving.

Notes

Use leftover rotisserie chicken for quick preparation. Feel free to customize the cheese and add more low-carb vegetables.
