Ingredients
2 cups cooked chicken, shredded or diced
1 (10.5 oz) can cream of chicken soup (low-carb version recommended)
1/2 cup sour cream or plain Greek yogurt
1/4 cup chicken broth
1 cup steamed broccoli florets
1/2 cup shredded cheddar cheese, plus extra for topping
1/4 cup grated Parmesan cheese
1/4 cup chopped green onions (optional, for garnish)
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and freshly ground black pepper to taste
Optional: pinch of red pepper flakes, dried thyme or rosemary
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
2. In a large mixing bowl, combine chicken, soup, sour cream, broth, broccoli, 1/2 cup cheddar, Parmesan, garlic powder, onion powder, salt, and pepper. Mix well.
3. Spread mixture evenly into prepared baking dish.
4. Top with remaining cheddar cheese.
5. Bake 25-30 minutes until bubbly and golden.
6. Let rest 5 minutes before serving. Garnish with green onions if desired.
