Description

Flavorful and simple to prepare, Easy Mexican Rice is a perfect addition to any meal, serving as a side dish or base for burrito bowls.


Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the rice to the skillet and toast for 2-3 minutes, stirring frequently.
  4. Pour in the broth and canned tomatoes (with juice), then add the chili powder, cumin, salt, and pepper.
  5. Bring the mixture to a boil, then reduce to low heat, cover, and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
  6. Remove from heat and let it sit covered for 5 minutes.
  7. Fluff the rice with a fork and garnish with chopped cilantro if desired.

Notes

Use fresh spices for the best taste and don’t skip the cilantro for added freshness.
