- 1 cup long-grain white rice
- 2 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Chopped fresh cilantro for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the rice to the skillet and toast for 2-3 minutes, stirring frequently.
- Pour in the broth and canned tomatoes (with juice), then add the chili powder, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce to low heat, cover, and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and garnish with chopped cilantro if desired.
Notes
Use fresh spices for the best taste and don’t skip the cilantro for added freshness.
