  • 2 medium sweet potatoes, peeled and diced
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent (3-5 minutes).
  3. Add the diced sweet potatoes to the skillet. Cook until tender (about 10 minutes), stirring occasionally.
  4. In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper.
  5. Stir in the sautéed sweet potatoes and onions, followed by the shredded cheese. Mix well.
  6. Pour the mixture into a greased 9×13 inch baking dish, spreading evenly.
  7. Bake in the preheated oven for 25-30 minutes, until eggs are set and top is golden. Check doneness with a toothpick.
  8. Let cool for a few minutes before serving. Garnish with fresh herbs if desired.
