- 2 medium sweet potatoes, peeled and diced
- 6 large eggs
- 1 cup milk
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced onion
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent (3-5 minutes).
- Add the diced sweet potatoes to the skillet. Cook until tender (about 10 minutes), stirring occasionally.
- In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper.
- Stir in the sautéed sweet potatoes and onions, followed by the shredded cheese. Mix well.
- Pour the mixture into a greased 9×13 inch baking dish, spreading evenly.
- Bake in the preheated oven for 25-30 minutes, until eggs are set and top is golden. Check doneness with a toothpick.
- Let cool for a few minutes before serving. Garnish with fresh herbs if desired.
