All the flavors of tacos in a quick, customizable rice bowl packed with protein, veggies, and fresh toppings.
Ingredients
1 lb ground beef or turkey (or plant-based alternative)
1 packet taco seasoning (or homemade)
4 cups cooked rice (white, brown, or cauliflower)
1 can black beans, rinsed and drained
1 can corn, drained
Shredded lettuce
Diced tomatoes
Diced red onion
1 avocado or guacamole
1 cup shredded cheese (cheddar, Monterey Jack, or blend)
Salsa
Sour cream or Greek yogurt
Fresh cilantro, chopped
Lime wedges
Instructions
1. Brown ground meat in skillet over medium heat, breaking it up until fully cooked. Drain excess grease.
2. Stir in taco seasoning and a splash of water. Simmer until liquid is absorbed and meat is well-coated.
3. In serving bowls, add a base layer of cooked rice.
4. Top rice with seasoned meat.
5. Add spoonfuls of black beans and corn.
6. Layer with shredded lettuce, diced tomatoes, and red onion.
7. Add toppings such as avocado, shredded cheese, salsa, sour cream, and cilantro.
8. Finish with a squeeze of lime juice before serving.
Notes
Make ahead: Prep rice and meat in advance for quick assembly.
For meal prep: Store components separately and assemble when ready to eat.
