- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/2 cup cherry tomatoes, halved
- 1/4 cup onion, diced
- Salt and pepper to taste
- Olive oil or cooking spray (for greasing the muffin tin)
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin with olive oil or cooking spray.
- In a large bowl, whisk the eggs and season with salt and pepper.
- Add the chopped spinach, feta cheese, cherry tomatoes, and diced onion to the egg mixture, and stir well to combine.
- Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until the egg muffins are set and lightly golden on top.
- Allow to cool slightly before removing from the tin. Serve warm or store in the refrigerator for meal prep.
Notes
Make sure to grease the muffin tin well to prevent sticking. Feel free to add other vegetables, meats, or herbs for extra flavor.
