Description

A delightful dish of flaky puff pastry filled with creamy eggs, spinach, and Parmesan cheese, perfect for breakfast or brunch.


Ingredients

  • 1 package of puff pastry
  • 2 cups fresh spinach
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Butter or oil for greasing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and cut it into rounds to fit your baking cups.
  3. Place the pastry in greased cups, and prick the bottom with a fork.
  4. Bake for 15 minutes or until golden brown.
  5. In a skillet, sauté the spinach until wilted.
  6. In a bowl, beat the eggs with cream, Parmesan, salt, and pepper.
  7. Once the pastry shells are baked, fill them with sautéed spinach and pour the egg mixture on top.
  8. Bake for an additional 15-20 minutes, until the egg is set.
  9. Serve warm.

Notes

For variations, consider adding cooked bacon, ham, or smoked salmon for extra flavor. You can also experiment with different vegetables or cheeses.
