- 1 package of puff pastry
- 2 cups fresh spinach
- 4 large eggs
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Butter or oil for greasing
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry and cut it into rounds to fit your baking cups.
- Place the pastry in greased cups, and prick the bottom with a fork.
- Bake for 15 minutes or until golden brown.
- In a skillet, sauté the spinach until wilted.
- In a bowl, beat the eggs with cream, Parmesan, salt, and pepper.
- Once the pastry shells are baked, fill them with sautéed spinach and pour the egg mixture on top.
- Bake for an additional 15-20 minutes, until the egg is set.
- Serve warm.
Notes
For variations, consider adding cooked bacon, ham, or smoked salmon for extra flavor. You can also experiment with different vegetables or cheeses.
