Description

A delightful pumpkin spice roll cake, perfect for fall gatherings, with rich cream cheese filling and warm spices.


Ingredients

  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 2 tsp pumpkin pie spice blend
  • 1/4 tsp salt
  • 3 large eggs
  • 11/4 cups granulated sugar
  • 1 cup canned pumpkin puree
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar, for dusting towel
  • 8 oz cream cheese, at room temperature
  • 1/4 cup salted butter, softened
  • 1 tsp vanilla extract
  • 1/8 tsp ground cinnamon
  • Pinch sea salt
  • 3 cups powdered sugar

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a jelly roll pan.
  2. Whisk together flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
  3. Beat eggs and sugar together until thick and pale.
  4. Add pumpkin and 1 tsp vanilla extract to the egg mixture and beat well.
  5. Gradually add dry ingredients to wet mixture; stir until just combined.
  6. Spread batter evenly into the prepared pan.
  7. Bake for 13-15 minutes until the cake springs back when touched.
  8. Let the cake cool for 5 minutes, then dust a towel with powdered sugar and invert the cake onto the towel.
  9. Roll up the cake with the towel, starting from one short end, and let it cool completely.
  10. Beat cream cheese and butter together until smooth; mix in other filling ingredients.
  11. Unroll the cooled cake, spread the filling, and roll it back up without the towel.
  12. Chill in the refrigerator for at least an hour before slicing.
  13. Serve with whipped cream or ice cream, and dust with powdered sugar if desired.

Notes

Store leftovers in the refrigerator for 3-5 days or freeze for up to 2 months.
