Instructions
- Separate the egg whites and yolks, placing them in separate bowls.
- Mix yolks with milk, vanilla extract, and optional lemon zest until creamy.
- Gradually sift in flour and baking powder into yolk mixture; stir until smooth.
- Beat egg whites with a mixer until foamy, add vinegar and sugar; continue whipping until stiff peaks form.
- Gently fold whipped egg whites into yolk mixture.
- Preheat a non-stick skillet with oil over low to medium heat.
- Spoon batter into the skillet using a ¼ cup measuring cup, leaving space between pancakes.
- Cover and cook for 4-5 minutes; flip and cook for an additional 3-4 minutes.
- Remove pancakes from the skillet and stack on a plate.
- Optional: Beat cold heavy cream with sugar and vanilla until soft peaks form for whipped cream.
- Serve pancakes warm with toppings of whipped cream, berries, powdered sugar, and maple syrup.
