- 1 cup unsalted butter, softened
- ⅔ cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- Pinch of salt
- Extra sugar for sprinkling (optional)
Instructions
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Add the egg yolk and vanilla extract, mixing until well combined.
- Gradually add the all-purpose flour and pinch of salt, stirring until a soft dough forms.
- Shape the dough into a log and wrap it in plastic wrap. Refrigerate for about 1 hour to firm it up.
- Preheat your oven to 350°F (175°C).
- After chilling, remove the dough from the fridge and slice it into ¼-inch rounds.
- Place the cookie rounds on a parchment-lined baking sheet and sprinkle with sugar if desired.
- Bake in the preheated oven for 10–12 minutes or until the edges are lightly golden. Allow to cool on a wire rack before serving.
Notes
Store leftover cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them wrapped in plastic wrap and placed in a freezer-safe bag.
