Ingredients

  • 1 cup unsalted butter, softened
  • ⅔ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • Pinch of salt
  • Extra sugar for sprinkling (optional)

Instructions

  1. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  2. Add the egg yolk and vanilla extract, mixing until well combined.
  3. Gradually add the all-purpose flour and pinch of salt, stirring until a soft dough forms.
  4. Shape the dough into a log and wrap it in plastic wrap. Refrigerate for about 1 hour to firm it up.
  5. Preheat your oven to 350°F (175°C).
  6. After chilling, remove the dough from the fridge and slice it into ¼-inch rounds.
  7. Place the cookie rounds on a parchment-lined baking sheet and sprinkle with sugar if desired.
  8. Bake in the preheated oven for 10–12 minutes or until the edges are lightly golden. Allow to cool on a wire rack before serving.

Notes

Store leftover cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them wrapped in plastic wrap and placed in a freezer-safe bag.
