Delightfully fresh and healthy Fruit Spring Rolls filled with colorful fruits and served with a creamy dip.
Ingredients

- 8 sheets of rice paper
- Handful of mint leaves
- Handful of strawberries, chopped
- 2 kiwis, sliced
- 1 apple, sliced
- 1 mango, sliced
- 1/2 block cream cheese
- 1 cup heavy cream, softened
- 1/2 lime, juiced
- 1–2 tbsp of honey
Instructions
- Prepare the Fruits: Wash and chop the fruits into thin strips or slices.
- Soak the Rice Paper: Dip a sheet of rice paper in warm water for just a second and place it on a flat surface.
- Fill the Rolls: Lay a small amount of chopped fruit and mint leaves in the center of the rice paper.
- Roll Up the Spring Roll: Fold the ends over and roll it tightly like a burrito.
- Make the Dip: Whip heavy cream until fluffy, then mix in cream cheese, lime juice, and honey until smooth.
- Serve and Enjoy: Arrange the rolls on a platter and serve with the creamy dip.
