Description

Delightful cookies combining sweetness and tangy fruit, customizable with freeze-dried fruits.


Ingredients

  • 6 tbsp butter
  • ½ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • 1¼ cup flour
  • ½ tsp salt
  • ⅔ cup freeze-dried fruit
  • 1 egg (for curd)
  • ⅓ cup granulated sugar (for curd)
  • 1 tsp cornstarch
  • ¼ cup lemon or lime juice
  • 1 tsp vanilla extract
  • 1 pinch salt (for curd)
  • Zest of 4 limes (if making lime curd)
  • 2 tbsp butter (for curd)
  • Green food coloring (optional if making lime curd)

Instructions

  1. In a bowl, whisk together 1 egg, ⅓ cup granulated sugar, cornstarch, lemon or lime juice, and a pinch of salt.
  2. Add the zest of the limes if you are making lime curd.
  3. Cook the mixture over medium heat, stirring constantly until it thickens (about 5-7 minutes).
  4. Remove from heat and mix in 2 tbsp butter until melted and smooth.
  5. If desired, add green food coloring to achieve your preferred shade. Let the curd cool.
  6. Preheat your oven to 350°F (175°C).
  7. In a bowl, cream together 6 tbsp butter and ½ cup granulated sugar until light and fluffy.
  8. Beat in 1 egg and vanilla until well combined.
  9. In a separate bowl, mix flour and ½ tsp salt. Gradually add this to the butter mixture.
  10. Fold in the freeze-dried fruit gently.
  11. Scoop small balls of dough onto a parchment-lined baking sheet.
  12. Use your thumb to make an indentation in the center of each cookie.
  13. Fill each indentation with a spoonful of the prepared curd.
  14. Bake for 12-15 minutes or until the edges are golden. Cool cookies on a wire rack.

Notes

Use high-quality freeze-dried fruit for the best flavor. Let cookies cool completely before storing to prevent sogginess.
