  • 1 pound Baby potatoes (Halved for even cooking)
  • 4 tablespoons Unsalted butter (Melted)
  • 3 cloves Garlic (Minced)
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt (Or to taste)
  • 0.25 teaspoon Black pepper
  • 0.25 cup Beef broth
  • 1 tablespoon Olive oil

Instructions

  1. Gather and prepare all ingredients, cutting beef and halving potatoes.
  2. Optional: Parboil baby potatoes for a few minutes.
  3. Sear beef in olive oil over medium-high heat until browned.
  4. Mix melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper in a bowl to create the sauce.
  5. In the slow cooker, layer potatoes and seared beef. Pour garlic butter sauce and broth over the top.
  6. Cover and cook on low for 360-480 minutes or high for 180-240 minutes, until beef is fork-tender.
  7. Let rest for 10 minutes before serving.
