- 1.5 pounds Beef stew meat (Cut into bite-sized pieces)
- 1 pound Baby potatoes (Halved for even cooking)
- 4 tablespoons Unsalted butter (Melted)
- 3 cloves Garlic (Minced)
- 1 teaspoon Onion powder
- 1 teaspoon Smoked paprika
- 0.5 teaspoon Dried thyme
- 0.5 teaspoon Dried rosemary
- 0.5 teaspoon Salt (Or to taste)
- 0.25 teaspoon Black pepper
- 0.25 cup Beef broth
- 1 tablespoon Olive oil
Instructions
- Gather and prepare all ingredients, cutting beef and halving potatoes.
- Optional: Parboil baby potatoes for a few minutes.
- Sear beef in olive oil over medium-high heat until browned.
- Mix melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper in a bowl to create the sauce.
- In the slow cooker, layer potatoes and seared beef. Pour garlic butter sauce and broth over the top.
- Cover and cook on low for 360-480 minutes or high for 180-240 minutes, until beef is fork-tender.
- Let rest for 10 minutes before serving.
Notes
Serve with a side salad or warm bread. Optionally garnish with fresh herbs for added flavor and presentation.
