Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak bites dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add steak bites to the skillet in a single layer and sear for 1-2 minutes per side until browned. Remove from skillet and set aside.
  4. Add butter to the skillet. Once melted, add minced garlic and cook for about 30 seconds until fragrant.
  5. Add zucchini to the skillet and cook for 3-5 minutes, stirring occasionally until tender-crisp.
  6. Return steak bites to the skillet and toss to coat with garlic butter.
  7. Cook for another 1-2 minutes until steak is heated through.
  8. Garnish with fresh parsley if desired and serve immediately.

Notes

Ensure the skillet is hot before adding steak for a good sear. You can substitute zucchini with asparagus or broccoli.
