Description

Creamy garlic mashed potatoes infused with roasted garlic, perfect for any family dinner or gathering.


Ingredients

  • pounds of potatoes (Yukon Gold or Russet), whole and unpeeled
  • 1 whole head of garlic
  • 1 tablespoon of olive oil
  • 4 tablespoons of unsalted butter
  • 1 cup of heavy cream
  • ¾ cup of grated Parmigiano cheese
  • 1 teaspoon of salt
  • ⅛ teaspoon of black pepper

Instructions

  1. Roast the garlic by slicing the top off a whole head and drizzling it with olive oil. Wrap in foil and roast at 400°F for about 40 minutes.
  2. Boil the potatoes in a large pot of salted water until fork-tender, about 30 minutes. Drain and let sit to evaporate excess steam.
  3. Rice the potatoes by pressing through a potato ricer into a large pot.
  4. Warm the butter and cream in a saucepan, then pour into the riced potatoes. Add roasted garlic, salt, pepper, and cheese. Stir gently until combined.
  5. Adjust seasoning, adding more butter-cream mixture if needed for desired consistency.
  6. Serve warm, garnished with fresh herbs if desired.

Notes

For extra garlic flavor, you can roast two heads of garlic. Avoid overmixing to keep the potatoes fluffy.
