Ingredients

- 2½ pounds of potatoes (Yukon Gold or Russet), whole and unpeeled
- 1 whole head of garlic
- 1 tablespoon of olive oil
- 4 tablespoons of unsalted butter
- 1 cup of heavy cream
- ¾ cup of grated Parmigiano cheese
- 1 teaspoon of salt
- ⅛ teaspoon of black pepper
Instructions
- Roast the garlic by slicing the top off a whole head and drizzling it with olive oil. Wrap in foil and roast at 400°F for about 40 minutes.
- Boil the potatoes in a large pot of salted water until fork-tender, about 30 minutes. Drain and let sit to evaporate excess steam.
- Rice the potatoes by pressing through a potato ricer into a large pot.
- Warm the butter and cream in a saucepan, then pour into the riced potatoes. Add roasted garlic, salt, pepper, and cheese. Stir gently until combined.
- Adjust seasoning, adding more butter-cream mixture if needed for desired consistency.
- Serve warm, garnished with fresh herbs if desired.
Notes
For extra garlic flavor, you can roast two heads of garlic. Avoid overmixing to keep the potatoes fluffy.
