Description

A tender chicken and flavorful baby potatoes dish, perfect for busy weeknights, cooked effortlessly in a crockpot.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash and halve the baby potatoes. Mince the garlic and set aside.
  2. Rub the chicken breasts with olive oil and season with Italian seasoning, salt, and pepper.
  3. In the crockpot, layer the halved potatoes at the bottom, followed by the seasoned chicken breasts on top.
  4. Pour chicken broth over the chicken and potatoes to keep them moist.
  5. Sprinkle minced garlic and parmesan cheese over the top.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is cooked through.
  7. Check the internal temperature (165°F). Serve on a platter, drizzling sauce from the crockpot over the top.
  8. Garnish with chopped parsley if desired.
