Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash the baby potatoes thoroughly to remove dirt and halve them.
  2. Mince the garlic cloves finely to release flavor.
  3. Rub chicken breasts with olive oil, then season with Italian seasoning, salt, pepper, and red pepper flakes if using.
  4. Layer the halved potatoes in the bottom of the crockpot and place the seasoned chicken on top.
  5. Pour chicken broth over the chicken and potatoes.
  6. Sprinkle minced garlic and grated parmesan cheese over the chicken.
  7. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and cooked through.
  8. Remove chicken and potatoes, spoon sauce over them, and garnish with parsley.
