Ingredients
2 lb baby potatoes, halved
4 boneless skinless chicken breasts (or 6 thighs)
1/2 cup freshly grated Parmesan cheese
4 cloves garlic, minced
1/2 cup unsalted butter, melted
1 tsp paprika
1 tsp Italian seasoning
1 tsp kosher salt
1/2 tsp black pepper
2 tbsp chopped fresh parsley (for garnish)
Optional: 8 oz green beans (last 60 minutes); 1 cup baby carrots
Instructions
1. Grease the slow cooker and add halved potatoes.
2. Mix melted butter, garlic, Parmesan, paprika, Italian seasoning, salt, and pepper.
3. Place chicken over potatoes, pour garlic–Parmesan butter on top.
4. Cook on LOW 6–7h or HIGH 3–4h until chicken reaches 165°F.
5. Stir gently, rest 5 minutes, garnish with parsley, and serve.
Notes
Thighs stay juicier; breasts are leaner.
Add 1/4 cup broth if you want extra sauce.
Green beans should go in during the last hour.
Refrigerate leftovers up to 3 days.
