Ingredients
2 lbs boneless, skinless chicken breasts or thighs
1 (10.75 oz) can condensed cream of chicken soup
1 (8 oz) block cream cheese, softened
1/2 cup grated Parmesan cheese, plus extra for garnish
1/4 cup chicken broth
4–6 cloves garlic, minced
1 tsp dried Italian seasoning
1/2 tsp onion powder
Salt and freshly ground black pepper to taste
Fresh parsley, chopped, for garnish
Instructions
1. Pat chicken dry and season with salt and pepper.
2. In a medium bowl, whisk together cream of chicken soup, softened cream cheese, Parmesan cheese, chicken broth, minced garlic, Italian seasoning, and onion powder until smooth.
3. Place the seasoned chicken in the bottom of the slow cooker.
4. Pour the creamy garlic Parmesan sauce over the chicken, coating it evenly.
5. Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours, until chicken is tender and fully cooked.
6. Shred the chicken with two forks directly in the slow cooker and stir to coat in the sauce.
7. If sauce is too thick, stir in a splash of chicken broth or milk; if too thin, whisk in a cornstarch slurry and cook until thickened.
8. Garnish with extra Parmesan and chopped parsley before serving.
Notes
Add red pepper flakes for a spicy kick.
Stir in sautéed mushrooms or chopped sun-dried tomatoes for extra flavor.
Mix in fresh spinach during the last 15 minutes of cooking for color and nutrients.
Serve over pasta, rice, or with roasted potatoes.
