Ingredients

  • 1 cup white chocolate chips
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon vanilla extract
  • Sprinkles or crushed nuts for coating

Instructions

  1. In a bowl, combine gingerbread cookie crumbs, softened cream cheese, ground cinnamon, ground nutmeg, ground ginger, and vanilla extract. Mix well until smooth and sticky.
  2. Roll small pieces of the mixture into balls, about 1 inch in diameter.
  3. Melt white chocolate chips in a microwave-safe bowl in 30-second increments, stirring after each, until smooth.
  4. Dip each truffle into the melted white chocolate, using a fork to coat evenly.
  5. Place coated truffles on a baking sheet lined with parchment paper. While still wet, sprinkle with toppings.
