- 1 cup white chocolate chips

Instructions
- In a bowl, combine gingerbread cookie crumbs, softened cream cheese, ground cinnamon, ground nutmeg, ground ginger, and vanilla extract. Mix well until smooth and sticky.
- Roll small pieces of the mixture into balls, about 1 inch in diameter.
- Melt white chocolate chips in a microwave-safe bowl in 30-second increments, stirring after each, until smooth.
- Dip each truffle into the melted white chocolate, using a fork to coat evenly.
- Place coated truffles on a baking sheet lined with parchment paper. While still wet, sprinkle with toppings.
