- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Mix the melted butter, granulated sugar, and lemon zest until smooth.
- Add the eggs one at a time, mixing after each addition, then stir in the lemon juice.
- Combine the gluten-free flour, baking powder, and salt in another bowl.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
- Dust with powdered sugar if desired before serving.
