Delicious and healthy Greek Chicken Bowls, customizable with fresh ingredients, perfect for a weeknight dinner.

- 4 chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon oregano
- Salt, to taste
- Pepper, to taste
- 1 cucumber, chopped
- 2 tomatoes, chopped
- 1 red onion, chopped
- 1 cup rice or quinoa
- 1 cup Greek yogurt
- 2 tablespoons dill, chopped
- 1 cup black olives
Instructions
- In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
- Grill the marinated chicken until cooked through, about 6-7 minutes per side.
- Cook rice or quinoa according to package instructions.
- While the chicken is cooking, chop cucumber, tomatoes, and red onion.
- In another bowl, mix Greek yogurt with chopped dill, salt, and a little lemon juice to make tzatziki sauce.
- Once chicken is cooked, slice it.
- To assemble, place rice or quinoa at the bottom of the bowls, top with chicken, fresh veggies, and a dollop of tzatziki sauce.
- Add olives as a garnish and enjoy!
Notes
Marinate the chicken overnight for even deeper flavor. Use brown rice or whole grain quinoa for added nutrition.
