Description

Enjoy a healthy and flavorful Greek Chicken Bowl with marinated chicken, crunchy vegetables, and zesty tzatziki.


Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon oregano
  • Salt, to taste
  • Pepper, to taste
  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • 1 red onion, chopped
  • 1 cup olives
  • 1 cup feta cheese, crumbled
  • 1 cup rice or quinoa
  • 1 cup tzatziki sauce

Instructions

  1. Marinate the chicken breasts by mixing olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Coat the chicken and marinate for at least 30 minutes.
  2. Cook the chicken by grilling for 6-7 minutes on each side or baking at 375°F (190°C) for 20-25 minutes until fully cooked.
  3. Prepare rice or quinoa according to package instructions.
  4. Chop cucumber, tomato, and red onion.
  5. Assemble the bowls by placing rice or quinoa at the base, topping with sliced chicken, chopped veggies, olives, and crumbled feta cheese.
  6. Drizzle tzatziki sauce on top and serve immediately.

Notes
