- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons lemon juice

- 1 cucumber, chopped
- 2 tomatoes, chopped
- 1 red onion, chopped
- 1 cup olives
- 1 cup feta cheese, crumbled
- 1 cup rice or quinoa
- 1 cup tzatziki sauce
Instructions
- Marinate the chicken breasts by mixing olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Coat the chicken and marinate for at least 30 minutes.
- Cook the chicken by grilling for 6-7 minutes on each side or baking at 375°F (190°C) for 20-25 minutes until fully cooked.
- Prepare rice or quinoa according to package instructions.
- Chop cucumber, tomato, and red onion.
- Assemble the bowls by placing rice or quinoa at the base, topping with sliced chicken, chopped veggies, olives, and crumbled feta cheese.
- Drizzle tzatziki sauce on top and serve immediately.
