Description

A colorful and nutritious meal packed with proteins, fresh veggies, and whole grains, bursting with Mediterranean flavors.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups cooked quinoa or rice
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 red onion, diced
  • 1 cup Kalamata olives
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • Salt to taste

Instructions

  1. In a bowl, mix olive oil, oregano, salt, and pepper. Add the diced chicken and marinate for at least 30 minutes.
  2. Cook the marinated chicken in a skillet over medium heat until fully cooked.
  3. To make tzatziki sauce, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl. Mix well and refrigerate.
  4. Assemble the bowls by placing a scoop of quinoa or rice on the bottom, then topping with cooked chicken, cucumbers, tomatoes, red onion, olives, and feta cheese.
  5. Drizzle with tzatziki sauce and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Marinating the chicken longer than 30 minutes boosts the flavor.
