Description

This bright and flavorful grilled shrimp bowl features succulent shrimp, creamy avocado, and a fresh corn salsa, all drizzled with a delicious garlic sauce.


Ingredients

  • 1 lb. large shrimp (peeled and deveined)
  • 1 avocado (sliced or mashed)
  • 1 cup frozen corn (thawed)
  • 1/2 cup red onion (diced)
  • 1/4 cup cilantro (chopped)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • Lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Clean and dry the shrimp. Toss them with olive oil and the spices.
  2. Mix the corn salsa ingredients in a separate bowl. Let the flavors sit a few minutes.
  3. Heat your grill to medium. Grill the shrimp for 2–3 minutes per side until they are pink and firm.
  4. Whisk the mayo, sour cream, cilantro, lemon juice, minced garlic, salt, and pepper to make the sauce.
  5. Layer the bowls: put the corn salsa first, add the grilled shrimp, and top with avocado. Drizzle the creamy garlic sauce.

Notes

Serve warm or at room temperature. Put the bowl over rice, quinoa, or greens. Offer chips on the side for scooping if you like.
