Description

Delicious and filling Ground Beef Enchiladas filled with seasoned beef, tangy sauce, and melted cheese.


Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef with diced onion over medium heat for 5-7 minutes.
  3. Add minced garlic, cumin, and chili powder; sauté for an additional minute.
  4. Fill each tortilla with the beef mixture, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour enchilada sauce over the rolled tortillas and sprinkle shredded cheese on top.
  6. Bake uncovered for 20-25 minutes until bubbly and golden.
