Description

A comforting dish featuring ground beef, cheese, and enchilada sauce wrapped in tortillas, perfect for busy weeknights.


Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add your ground beef and diced onions. Cook until browned and onions are translucent, about 5-7 minutes.
  3. Add minced garlic, cumin, and chili powder to the skillet and sauté for another minute.
  4. Spoon the beef mixture onto each tortilla, roll them up tightly, and place seam-side down in a greased baking dish.
  5. Pour the enchilada sauce evenly over the top, then sprinkle the shredded cheese on top.
  6. Bake the enchiladas uncovered for about 20-25 minutes until the edges are bubbling and the cheese is golden brown.
