Ingredients

  • 1 lb lean ground beef (93%)
  • 2 medium sweet potatoes, peeled and diced
  • 1 sliced avocado
  • 1 cup cottage cheese
  • 1 diced yellow onion
  • 2 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp)
  • 2 tbsp hot honey
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp ground cinnamon
  • Salt and pepper, to taste
  • Optional: chopped cilantro, red pepper flakes, lime juice

Instructions

  1. Preheat the oven to 400°F (200°C). Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast for 40–45 minutes, stirring halfway through.
  2. Heat 1 tbsp olive oil in a skillet over medium heat. Sauté diced onion until soft, about 3–4 minutes.
  3. Add ground beef to the skillet. Cook for 6–8 minutes, breaking it apart. Stir in taco seasoning, salt, and pepper. Cook until browned.
  4. Assemble bowls: place sweet potatoes on the bottom, then add the ground beef, avocado slices, and a scoop of cottage cheese.
  5. Drizzle hot honey generously over each bowl. Add optional garnishes if desired.
  6. Serve immediately and enjoy while warm.

Notes

This dish can be served as a hearty lunch or dinner option and is great for meal prep. Leftovers can be stored in an airtight container for up to 3 days.
