Delicious and nutritious breakfast cookies perfect for toddlers, made with wholesome ingredients like oats, bananas, and peanut butter.


Ingredients

  • 11/4 cup gluten-free rolled oats
  • 1 ripe medium banana, mashed (about 3.2 oz)
  • 1/4 cup unsweetened applesauce
  • 2 tbsp peanut butter or any nut butter
  • 1 egg or 1 flax egg
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, combine the gluten-free rolled oats, mashed banana, applesauce, peanut butter, egg, vanilla extract, and ground cinnamon. Stir until well combined.
  4. Scoop out portions of the dough (about 1-½ to 2 tablespoons) and place them on the prepared baking sheet, leaving space between each cookie.
  5. Gently flatten the cookie dough balls to about ½ inch thick.
  6. Bake in the oven for about 10 minutes, until the edges are slightly golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
