- 1–1/4 cup gluten-free rolled oats
- 1 ripe medium banana, mashed (about 3.2 oz)
- 1/4 cup unsweetened applesauce
- 2 tbsp peanut butter or any nut butter
- 1 egg or 1 flax egg
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F.
- Line a baking sheet with parchment paper.
- In a medium bowl, combine the gluten-free rolled oats, mashed banana, applesauce, peanut butter, egg, vanilla extract, and ground cinnamon. Stir until well combined.
- Scoop out portions of the dough (about 1-½ to 2 tablespoons) and place them on the prepared baking sheet, leaving space between each cookie.
- Gently flatten the cookie dough balls to about ½ inch thick.
- Bake in the oven for about 10 minutes, until the edges are slightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Store cookies in an airtight container for up to three days or freeze for up to three months. Adjust sweetness and ingredients based on toddler preferences.
