Description

Delicious and healthy sweet potato hash browns that are crispy and flavorful, perfect for breakfast or a snack.


Ingredients

  • 2 large sweet potatoes, grated
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat until shimmering.
  2. Add the finely chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the grated sweet potatoes, paprika, salt, and pepper, mixing well.
  4. Spread the mixture in the skillet and cook for 5-7 minutes, pressing down with a spatula.
  5. Check for golden brown, then carefully flip and cook the other side for another 5-7 minutes.
  6. Once crispy, transfer to a serving plate and garnish with fresh parsley.

Notes

Try adding chili powder for a spicy kick or fresh herbs for added flavor.
