- 2 large sweet potatoes, grated
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a skillet over medium heat until shimmering.
- Add the finely chopped onion and sauté for 3-4 minutes until translucent.
- Add the grated sweet potatoes, paprika, salt, and pepper, mixing well.
- Spread the mixture in the skillet and cook for 5-7 minutes, pressing down with a spatula.
- Check for golden brown, then carefully flip and cook the other side for another 5-7 minutes.
- Once crispy, transfer to a serving plate and garnish with fresh parsley.
Notes
Try adding chili powder for a spicy kick or fresh herbs for added flavor.
