Ingredients
Olive oil
Butter
Chicken or vegetable broth
All-purpose flour
Whole milk
Yellow onions
Garlic cloves
Russet or Yukon Gold potatoes
Fresh parsley
Fresh chives
Fresh thyme
Sharp cheddar cheese, grated
Sour cream or cream cheese (optional)
Salt
Black pepper
Smoked paprika
Instructions
1. Dice onions and mince garlic. Peel and cube potatoes into 1/2–3/4 inch cubes. Grate cheddar cheese. Chop parsley, chives, and thyme.
2. In a large pot, melt butter and olive oil. Sauté onions until softened, then add garlic and cook until fragrant.
3. Sprinkle flour over onions and garlic, whisking for 1–2 minutes to form a roux.
4. Slowly whisk in broth until smooth. Add potatoes and bring to a gentle simmer. Cook covered 15–20 minutes until potatoes are fork-tender.
5. Stir in milk and bring back to a gentle simmer without boiling.
6. Remove from heat. Stir in grated cheddar cheese gradually until melted and smooth.
7. (Optional) Stir in sour cream or cream cheese for extra creaminess.
8. Season with salt, pepper, smoked paprika, parsley, chives, and thyme. Adjust seasoning to taste.
