Ingredients
Fresh broccoli florets, chopped
Low-sodium chicken broth
Milk (dairy or unsweetened non-dairy)
Shredded cheddar cheese (sharp or mild)
Protein source: cooked shredded chicken, Greek yogurt, or unflavored protein powder
Onion, diced
Garlic, minced
Olive oil or butter
Dijon mustard
Pinch of nutmeg
Cornstarch slurry or roux (optional, for extra creaminess)

Instructions
1. Heat olive oil or melt butter in a large pot over medium heat; add diced onion and cook until soft and translucent.
2. Stir in minced garlic and cook 30–60 seconds until fragrant.
3. Add chopped broccoli and pour in chicken broth; bring to a gentle simmer and cook until broccoli is tender-crisp.
4. If using raw chicken, simmer in the broth until cooked through, remove, shred, and set aside; if using cooked shredded chicken, reserve to add later.
5. Blend the soup with an immersion blender to your desired texture (or carefully blend in batches in a countertop blender).
6. Reduce heat to low; stir in milk, a little Dijon mustard, and a pinch of nutmeg (do not boil).
7. Gradually add shredded cheddar, stirring constantly until fully melted and smooth; keep heat low to prevent graininess.
8. Return shredded chicken to the pot if using; for extra protein, stir in Greek yogurt or protein powder off the heat.
9. Adjust thickness with a cornstarch slurry or roux if desired; season to taste with salt and black pepper, then serve.
