Ingredients

- 1 pound chicken breast, diced
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 packet taco seasoning
- Salt and pepper to taste
- Toppings: avocado, cheese, cilantro, lime juice
Instructions
- Heat a large pot over medium heat and add a little oil. Add the chopped onion and minced garlic and cook until soft and fragrant (3 to 5 minutes).
- Add the diced chicken breast and cook until browned on all sides (5 to 7 minutes).
- Mix in the black beans, corn, diced tomatoes, chicken broth, and taco seasoning. Stir to combine.
- Bring to a boil, then reduce heat to low and let simmer for 20 to 25 minutes.
- Taste the soup and season with salt and pepper as needed.
- Ladle soup into bowls and top with avocado, cheese, cilantro, and lime juice.
