A delicious and nutritious egg bake packed with protein, perfect for breakfast or brunch.

- 12 large eggs
- 16 ounces full-fat cottage cheese
- 1 large red bell pepper – diced
- 1/2 cup diced yellow onion
- 4 cups chopped spinach
- 1/4 cup shredded gruyere or gouda cheese
- 1/2 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- Preheat the oven to 375°F and spray a 9×13 baking pan with cooking spray to prevent sticking.
- Add the chopped veggies in an even layer at the bottom of the baking dish.
- Crack the eggs into a large mixing bowl and whisk them well, making sure to break the yolks.
- Add in the cottage cheese, seasoning, and 1/4 cup of the shredded gouda cheese and mix well.
- Pour the egg and cottage cheese mixture into the baking dish over the veggies.
- Spread the eggs in an even layer then top with the remaining shredded cheddar cheese.
- Bake in the oven on the middle rack until set, about 50-55 minutes.
- Once the egg bake is done, remove it from the oven, allow it to cool for at least 15 minutes, then slice and serve it!
Notes
Feel free to mix and match vegetables based on your preferences. This dish can be made with low-fat cottage cheese for a lighter option.
