High Protein Stuffed Pepper Soup

Description

A warm and nourishing soup packed with protein, perfect for a weeknight dinner or gathering.


Ingredients

  • 4 large bell peppers, diced
  • 1 pound ground turkey or chicken
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 cup corn
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat and add the ground turkey or chicken. Cook until browned, about 5-7 minutes.
  2. Add the chopped onion and minced garlic to the pot and cook for 3-4 minutes until the onion softens.
  3. Stir in the diced bell peppers, black beans, diced tomatoes, corn, and vegetable broth. Mix well.
  4. Sprinkle in chili powder, cumin, salt, and pepper, stirring to combine.
  5. For stovetop, bring to a boil, then lower heat and simmer for 30 minutes. For crockpot, cook on low for 4-6 hours. For Instant Pot, set to high pressure for 10 minutes and use quick release when done.
  6. Serve hot, optionally garnished with fresh herbs or cheese.

Notes

Customize spices to taste and consider adding more veggies or grains for variation.
