- 1.5 lbs skinless boneless chicken thighs, cut into bite-sized chunks
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp sweet paprika
- 0.5 tsp curry powder
- 1 tbsp Greek yogurt
- 3 tbsp vegetable oil
- 3 tbsp butter, divided
- 6 garlic cloves, minced
- 1 medium onion, diced
- 1 (15-ounce) can tomato sauce
- 1 tsp sugar
- 0.5 tsp black pepper
- 2 cups heavy cream
Instructions
- Marinate Chicken: Combine chicken with Greek yogurt, salt, garlic powder, sweet paprika, and curry powder. Cover and refrigerate for at least 30 minutes.
- Sauté Aromatics: Melt 1 tablespoon of butter in a pot, add onion and sauté until soft. Stir in garlic and cook for an additional minute.
- Build Sauce Base: Add tomato sauce, sugar, salt, and black pepper to the mixture. Simmer for 15-20 minutes.
- Sear Chicken: Heat vegetable oil in a skillet and sear marinated chicken pieces until golden brown on both sides.
- Finish Sauce: Transfer seared chicken to the pot with the sauce, stir in remaining butter, then mix in heavy cream until smooth.
- Combine & Simmer: Cover pot and simmer for an additional 10-15 minutes.
- Serve: Ladle into bowls and garnish with cilantro and a drizzle of cream. Serve warm with naan or basmati rice.
