Description

A rich and creamy butter chicken dish full of flavor, perfectly spiced and comforting.


Ingredients

  • 1.5 lbs skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 0.5 tsp curry powder
  • 1 tbsp Greek yogurt
  • 3 tbsp vegetable oil
  • 3 tbsp butter, divided
  • 6 garlic cloves, minced
  • 1 medium onion, diced
  • 1 (15-ounce) can tomato sauce
  • 1 tsp sugar
  • 0.5 tsp black pepper
  • 2 cups heavy cream

Instructions

  1. Marinate Chicken: Combine chicken with Greek yogurt, salt, garlic powder, sweet paprika, and curry powder. Cover and refrigerate for at least 30 minutes.
  2. Sauté Aromatics: Melt 1 tablespoon of butter in a pot, add onion and sauté until soft. Stir in garlic and cook for an additional minute.
  3. Build Sauce Base: Add tomato sauce, sugar, salt, and black pepper to the mixture. Simmer for 15-20 minutes.
  4. Sear Chicken: Heat vegetable oil in a skillet and sear marinated chicken pieces until golden brown on both sides.
  5. Finish Sauce: Transfer seared chicken to the pot with the sauce, stir in remaining butter, then mix in heavy cream until smooth.
  6. Combine & Simmer: Cover pot and simmer for an additional 10-15 minutes.
  7. Serve: Ladle into bowls and garnish with cilantro and a drizzle of cream. Serve warm with naan or basmati rice.
