Description

A comforting homemade chicken pot pie filled with tender chicken, vibrant veggies, and a flaky crust, perfect for family dinners.


Ingredients

  • 1 pie crust
  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, cubed
  • 1/2 cup onion, chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a saucepan over medium heat, melt the butter.
  3. Add the chopped onions to the melted butter and cook until translucent.
  4. Stir in the all-purpose flour, then gradually add the chicken broth and milk, stirring until the mixture thickens.
  5. Add the shredded chicken, carrots, peas, potatoes, salt, and pepper, mixing well.
  6. Pour the filling into the prepared pie crust and cover it with the top crust, cutting slits for ventilation.
  7. Bake for 30-35 minutes until the crust is golden-brown.
  8. Let cool for a few minutes before serving.

Notes

For a golden top crust, brush it with egg wash before baking. Can be stored in the fridge for 3-4 days or frozen for up to 2 months.
