Delicious sushi rolls filled with shrimp, avocado, and cucumber, featuring a spicy kick from sriracha.
Ingredients

- 2 cups sushi rice
- 4 sheets nori (seaweed)
- 1 cucumber, sliced into thin strips
- 1 avocado, sliced
- 1 cup cooked shrimp or crab meat
- 2 tbsp sriracha sauce
- 1 tbsp toasted sesame seeds
Instructions
- Rinse the sushi rice until the water runs clear.
- Cook the sushi rice according to package instructions, then season with rice vinegar, sugar, and salt.
- Prepare the fillings by slicing cucumber and avocado.
- Set up a bamboo sushi mat covered with plastic wrap.
- Place nori shiny side down on the mat.
- Wet hands and spread sushi rice on nori, covering two-thirds of the sheet.
- Layer shrimp or crab, cucumber, avocado, and drizzle sriracha in the center.
- Roll the sushi tightly away from you using the mat.
- Slice the roll into eight pieces with a knife dipped in water.
- Serve with soy sauce, wasabi, pickled ginger, and optionally garnish with sesame seeds.
