Ingredients

  • 1 cup creamy peanut butter
  • 1/3 cup coconut flour
  • 1/4 cup maple syrup
  • 1 cup dark or semi-sweet chocolate chips
  • 1/2 tablespoon coconut oil

Instructions

  1. In a medium bowl, combine peanut butter, coconut flour, and maple syrup until smooth.
  2. Form the mixture into egg shapes by rolling 1-inch balls and flattening them into ovals.
  3. Place the ovals on parchment paper and freeze for 30 minutes.
  4. Heat chocolate chips and coconut oil in a bowl in the microwave, stirring every 30 seconds until melted.
  5. Using two forks, coat the peanut butter eggs in melted chocolate, allowing excess to drip off.
  6. Transfer the eggs back to parchment paper to harden.
  7. Optional: Drizzle with more melted chocolate for decoration.
  8. Refrigerate until ready to enjoy.

Notes

Store in an airtight container in the refrigerator for up to a week. Use natural peanut butter for a healthier option.
