Description

A quick and flavorful dish combining marinated chicken with honey-lime sauce and creamy avocado.


Ingredients

  • 4 pieces Boneless, Skinless Chicken Breasts
  • 3 tablespoons Honey
  • 2 tablespoons Lime Juice
  • 1 tablespoon Lime Zest
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • to taste Salt
  • to taste Pepper
  • 2 cups Cooked Jasmine or Basmati Rice
  • 1 medium Ripe Avocado
  • 1 tablespoon Extra Lime Juice
  • 1 tablespoon Olive Oil
  • to taste Fresh Cilantro or Parsley
  • to taste Chili Flakes
  • 1 tablespoon Toasted Sesame Seeds

Instructions

  1. Mix honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper in a bowl.
  2. Put chicken in the bowl. Coat each piece well. Let the chicken marinate 15–30 minutes.
  3. Heat a pan over medium heat with a little oil. Cook chicken 5–7 minutes per side, or until the center reaches 165°F (75°C). If baking, preheat oven to 400°F (200°C) and bake 20–25 minutes.
  4. Remove chicken and let it rest 5 minutes. Slice the chicken thin or leave whole.
  5. While chicken rests, cut the avocado, remove the pit, and dice or slice. Toss avocado with extra lime juice and olive oil.
  6. Fluff the cooked rice and place it on plates. Add chicken, then top with avocado. Sprinkle cilantro or parsley, chili flakes, and toasted sesame seeds.

Notes

Marinate chicken for at least 15 minutes for better flavor. Use a ripe avocado for creaminess, and add lime to prevent browning.
