- 1 lb chicken breasts (boneless, skinless)
- 1/4 cup honey
- 2 limes (juiced)
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper (to taste)
- 1 cup rice (uncooked)
- 1 avocado (diced)
- 1/2 cup cilantro (chopped)
- 1/4 cup sour cream
Instructions
- Whisk together honey, lime juice, chili powder, cumin, salt, and pepper in a bowl.
- Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.
- Prepare 1 cup of rice according to package directions, then set aside to cool.
- Heat your grill or skillet over medium heat and cook the marinated chicken for about 6-7 minutes on each side.
- Let the chicken rest before slicing.
- Combine the cooked rice, diced avocado, chopped cilantro, and sour cream in a large bowl.
- Gently fold everything together until well mixed and creamy.
- Spoon a generous scoop of the creamy avocado rice onto serving plates and top with sliced honey lime chicken. Drizzle extra lime juice over the top.
Notes
Marinate the chicken longer for enhanced flavor. Let the chicken rest before slicing to retain juices. Store avocado separately when storing for longer.
