Ingredients

  • 3 tablespoons Honey (for marinade)
  • 2 tablespoons Lime Juice (freshly squeezed)
  • 1 tablespoon Lime Zest
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground Cumin

  • 1 cup Jasmine Rice (or basmati)
  • 2 cups Chicken Broth
  • 2 pieces Avocado (diced)
  • 1 small Red Onion (finely chopped)
  • 1/4 cup Fresh Cilantro (chopped)
  • 1 tablespoon Olive Oil
  • 4 pieces Lime Wedges (for garnish)

Instructions

  1. Marinate the chicken by mixing honey, lime juice, lime zest, minced garlic, cumin, salt, and pepper in a bowl. Place the chicken breasts in the marinade and let sit for at least 30 minutes.
  2. Cook the rice by rinsing it under cold water until the water runs clear. In a saucepan, bring chicken broth to a boil. Add the rice, reduce heat to low, cover, and cook for about 15 minutes or until tender.
  3. Add diced avocado, chopped red onion, and cilantro to the rice and stir gently to combine.
  4. Heat olive oil in a skillet over medium heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side until cooked through and golden brown.
  5. Remove chicken from skillet and let rest for a few minutes before slicing.
  6. To serve, stack a generous amount of avocado rice on a plate, top with sliced chicken, and garnish with lime wedges.

Notes

For a spicier kick, add chopped jalapeños to the avocado rice mix. You can also grill the chicken for a smoky flavor. Let the chicken rest before slicing to ensure juiciness.
