- 2 cloves Garlic (minced)

- 1 cup Jasmine Rice (or basmati)
- 2 cups Chicken Broth
- 2 pieces Avocado (diced)
- 1 small Red Onion (finely chopped)
- 1/4 cup Fresh Cilantro (chopped)
- 1 tablespoon Olive Oil
- 4 pieces Lime Wedges (for garnish)
Instructions
- Marinate the chicken by mixing honey, lime juice, lime zest, minced garlic, cumin, salt, and pepper in a bowl. Place the chicken breasts in the marinade and let sit for at least 30 minutes.
- Cook the rice by rinsing it under cold water until the water runs clear. In a saucepan, bring chicken broth to a boil. Add the rice, reduce heat to low, cover, and cook for about 15 minutes or until tender.
- Add diced avocado, chopped red onion, and cilantro to the rice and stir gently to combine.
- Heat olive oil in a skillet over medium heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side until cooked through and golden brown.
- Remove chicken from skillet and let rest for a few minutes before slicing.
- To serve, stack a generous amount of avocado rice on a plate, top with sliced chicken, and garnish with lime wedges.
Notes
For a spicier kick, add chopped jalapeños to the avocado rice mix. You can also grill the chicken for a smoky flavor. Let the chicken rest before slicing to ensure juiciness.
