Description

A simple weeknight meal of marinated chicken topped with a sweet and fresh mango salsa, perfect for easy cooking.


Ingredients

  • 2 chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, diced (optional)
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • Olive oil (for grilling or baking)

Instructions

  1. Mix honey and lime juice in a bowl. Add salt and pepper.
  2. Put chicken breasts in the marinade. Let them sit for at least 30 minutes.
  3. While chicken marinates, mix diced mango, chopped red onion, jalapeño if you like heat, cilantro, and a squeeze of lime for the salsa.
  4. Grill the chicken about 6–7 minutes per side until cooked through, or bake at 375°F for 20–25 minutes.
  5. Top each cooked chicken breast with mango salsa and serve.

Notes

For best flavor, marinate up to 4 hours. Pat chicken dry before marinating for better adherence of marinade.
