A simple weeknight meal of marinated chicken topped with a sweet and fresh mango salsa, perfect for easy cooking.
Ingredients

- 2 chicken breasts
- 1/4 cup honey
- 1/4 cup lime juice
- 1 ripe mango, diced
- 1/4 red onion, finely chopped
- 1 jalapeño, diced (optional)
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
- Olive oil (for grilling or baking)
Instructions
- Mix honey and lime juice in a bowl. Add salt and pepper.
- Put chicken breasts in the marinade. Let them sit for at least 30 minutes.
- While chicken marinates, mix diced mango, chopped red onion, jalapeño if you like heat, cilantro, and a squeeze of lime for the salsa.
- Grill the chicken about 6–7 minutes per side until cooked through, or bake at 375°F for 20–25 minutes.
- Top each cooked chicken breast with mango salsa and serve.
Notes
For best flavor, marinate up to 4 hours. Pat chicken dry before marinating for better adherence of marinade.
