- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup cold butter, cubed
- 3/4 cup buttermilk
- 2 boneless, skinless chicken breasts
- 1 cup buttermilk (for marinating)
- 1 cup hot honey sauce (store-bought or homemade)
- Oil, for frying
- Salt and pepper, to taste
Instructions
- Marinate the Chicken: Start by marinating the chicken breasts in buttermilk for at least 1 hour.
- Preheat the Oven: Preheat your oven to 425°F (220°C).
- Make the Biscuit Dough: In a bowl, mix flour, baking powder, and salt. Cut in cold butter until crumbly, then stir in buttermilk until just combined.
- Knead and Roll the Dough: Lightly flour the surface and knead the dough gently, then roll it out to 1 inch thick and cut into circles.
- Bake the Biscuits: Place biscuits on a baking sheet and bake for 12-15 minutes until golden brown.
- Fry the Chicken: Heat oil and fry marinated chicken until golden and cooked through, about 5-7 minutes per side.
- Assemble the Biscuits: Place a piece of fried chicken between two biscuits, drizzled with hot honey sauce. Serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat biscuits at 350°F (175°C) for 5-10 minutes.
