- 2 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- 5 tablespoons milk (more if needed)

Instructions
- Preheat your oven to 350°F (175°C).
- Line your baking sheet with parchment paper or a silicone mat.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the dry mixture to the wet mixture and mix until just combined.
- Cover the dough and refrigerate for about 30 minutes.
- After chilling, roll out the dough to about ¼ inch thickness on a floured surface.
- Use cookie cutters to cut shapes from the dough and place them on the baking sheet.
- Bake for 8-10 minutes or until the edges are lightly golden.
- Allow cookies to cool on a wire rack.
- For the icing, mix powdered sugar, milk, and vanilla extract until smooth.
- Ice the cooled cookies and let the icing set for a couple of hours before serving.
