Deliciously soft and fudgy chocolate cookies coated in powdered sugar, perfect for any occasion.

- 1/2 cup unsweetened cocoa powder
- 3/4 cup granulated sugar
- 1/4 cup light olive oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar (for rolling)
- 1/3 cup powdered sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Set out two shallow bowls: one with granulated sugar and another for powdered sugar.
- In a large bowl, combine cocoa powder, granulated sugar, and oil, blending until mixed.
- Add eggs and vanilla extract, stirring just until incorporated.
- Gradually mix in salt, baking powder, and flour until a stiff dough forms. If sticky, chill in the refrigerator for about 30 minutes.
- Roll dough into 1 1/2 inch balls and coat in granulated sugar followed by powdered sugar.
- Place coated balls on the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10 minutes until the tops crackle and edges are set.
- Allow to cool on the baking sheet for 5-10 minutes before transferring to a wire rack to cool completely.
Notes
For best results, chill the dough if it’s too sticky and experiment with different sugar coatings.
