Description

Deliciously soft and fudgy chocolate cookies coated in powdered sugar, perfect for any occasion.


Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 1/4 cup light olive oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar (for rolling)
  • 1/3 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Set out two shallow bowls: one with granulated sugar and another for powdered sugar.
  3. In a large bowl, combine cocoa powder, granulated sugar, and oil, blending until mixed.
  4. Add eggs and vanilla extract, stirring just until incorporated.
  5. Gradually mix in salt, baking powder, and flour until a stiff dough forms. If sticky, chill in the refrigerator for about 30 minutes.
  6. Roll dough into 1 1/2 inch balls and coat in granulated sugar followed by powdered sugar.
  7. Place coated balls on the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 10 minutes until the tops crackle and edges are set.
  9. Allow to cool on the baking sheet for 5-10 minutes before transferring to a wire rack to cool completely.

Notes

For best results, chill the dough if it’s too sticky and experiment with different sugar coatings.
