A delicious and healthy crustless quiche made with creamy cottage cheese and fresh spinach, perfect for any meal.

- 1 cup cottage cheese (fresh, room temperature)
- 2 cups fresh spinach (chopped)
- 4 large eggs
- 1 cup milk
- 1 small onion (finely chopped)
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 cup cheddar cheese (shredded, divided)
Instructions
- Preheat your oven to 375°F (190°C) while preparing the filling.
- Sauté the finely chopped onion in a pan over medium heat until softened, about 5 minutes.
- Mix together cottage cheese, sautéed onions, chopped spinach, eggs, garlic powder, salt, pepper, and half of the cheddar cheese in a large bowl.
- Pour the mixture into a sprayed baking dish and top with the remaining cheddar cheese.
- Bake in the preheated oven for approximately 30-35 minutes, or until set and golden brown on top.
- Allow to cool slightly before slicing and serve warm or at room temperature.
