- 0.5 cup unsalted butter
- 1 cup freshly grated carrots

- 0.5 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan (9×9 inches).
- Combine the light brown sugar, kosher salt, and vanilla extract in a mixing bowl.
- Add the melted unsalted butter and the large egg, stirring until well combined.
- Whisk together the all-purpose flour, ground cinnamon, ground nutmeg, and baking powder in another bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the freshly grated carrots into the batter until evenly mixed.
- Pour the batter into the prepared baking pan and spread it out evenly.
- Beat the softened cream cheese, granulated sugar, and large egg yolk in a separate bowl until smooth and creamy.
- Spoon the cream cheese mixture over the carrot batter and use a knife to swirl it gently into the cake batter.
- Bake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan before cutting them into squares.
